Cerro Las Ranas means “hill of frogs” in Spanish. Jose Antonio named this coffee from his San Francisco Estate Cerro Las Ranas because this hillside leads up to a lagoon that is swarmed with frogs. The name is also a perfect fit for this pulped natural coffee, because in the pulped natural coffee the fruit is removed leaving a slimy sticky mucilage on while it dries, that feels almost like a frog’s skin to the touch.

The pulped natural process is a relatively new technique and is rather labor intensive. The coffee needs to be turned by hand every 45 minutes for the first 24 hours of drying. This is to ensure that the sticky mucilage dries evenly and does not ferment. The benefits though are enhanced sweetness and body in the final coffee.

The other unique and exciting thing about this coffee is that it is entirely “Peaberry” a phenomenon that happens when a coffee cherry only produces one seed instead of two. The theories on how and why this happens are numerous, but most people accept that Peaberries have more intense flavor. Jose Antonio sorts and collects these Peaberries to produce this wonderful lot!
